20. Baked Ham With Low Carb Bar-B-Q Sauce Glaze
- 5 pounds precooked ham, drained
- 1/2 C pourable sweetener
- 2 ts s lemon juice
- 5 Ts Low Carb Bar-B-Q Sauce
Place ham in Crock-Pot. Combine sweetener with 2 Ts Low Carb Bar-B-Q Sauce and lemon juice and spoon on ham. Cover and cook on Low for 6 to 7 hours. Turn crock pot to High setting. Remove ham. Stir 3 Ts Low Carb Bar-B-Q Sauce into drippings in Crock-Pot. Cook stirring occasionally until sauce is thickened. Spoon over ham.
21. Caribbean-Style Beans and Rice
- 1 C Dried Soy Beans
- 1/2 C chopped ham
- 2 Cloves garlic, minced
- 1 md Onion, chopped
- 1/2 ts Dried thyme
- 1/4 ts Black pepper
- 1 Habanero pepper minced
- 1 cn Coconut milk
- 1/4 C Water or broth
- 3 C Hot cooked wild rice
Soak soy beans overnight, drain. Combine peas with ham, garlic, onion, thyme, pepper, minced Habanero, coconut milk, and water in a crock pot. Cover and cook on low 8 to 12 hours. Before serving, mix in wild rice.
22. Creamy Ham And Broccoli
- 1/2 C chopped onion
- 3 Cs chopped ham (or chicken)
- 16 ounces frozen cut broccoli, thawed, drained
- 1 C mushrooms, sliced
- 1 T low carb thickener
- 8 oz Cheese Low Carb Spreads
- 8 oz sliced water chestnuts - (1 can), drained
- 1 C wild rise
- 1 C heavy creams
- 1/2 C chopped celery
- 1/2 ts freshly-ground black pepper
- Paprika
In crock pot, place ham, broccoli, mushrooms, low carb thickener, Cheese Low Carb Spread water chestnuts, rice, milk, celery, onion and pepper. Stir until blended. Smooth top, pushing rice down into mixture.
23. County Kerry Pork Roast
- 1 Fresh picnic ham or shoulder
- 1 lg Onion, chopped
- 1 ts Marjoram, crumbled
- 3/4 C Low Carb Bar-B-Q Sauce
- 3/4 C Water
Place pork in crock pot, sprinkle with onion and marjoram, pour mixture of Low Carb Bar-B-Q Sauce and water over, and cover. Cook on low for 10 hours or on high for 5 hours.
24. Ham And Chicken "Pie"
- 3 Cs mushrooms, sliced
- 2 Ts low carb thickener
- 1/8 ts marjoram
- 1/8 ts thyme
- 1/4 C onion, chopped
- 1/2 C celery, chopped
- 1 C cooked ham, diced
- 1 C cooked chicken, diced
- 10 ounce frozen string beans
- 1 T sesame seeds
- Melted butter
In large bowl, combine soup with marjoram, thyme, onion, celery, mushrooms, ham, chicken, and beans. Pour into slow-cooking pot. Cover and on low for 5 to 6 hours. Spoon into shallow dish. Brush with melted butter, sprinkle with sesame seeds.
25. Ham and Pasta Lite
- 1 C Uncooked Pasta Lite
- Vegetable oil (canola)
- 1 C Cubed ham
- 1 C chicken broth
- 1 T low carb thickener
- 1/2C cooked chicken, chopped
- 1 cn green beans, drained (8 oz.)
- 1 T Pimento, chopped 1/2 C Cheddar cheese, shredded
- 1/4 C Green pepper, chopped
Cook Pasta Lite according to package directions until barely tender. Drain and toss with just enough oil to coat. (3 T) Add Pasta Lite and remaining ingredients to a greased crock pot and stir to mix. Cover and cook on LOW setting 7 to 9 hours. Makes 2 servings or 1 1/2 to 2 quarts.
26. Ham And Zucchini Bake
- 5 Cs diced Zucchini
- 2 Cs coarsely ground cooked ham
- 1 C finely chopped onion
- 1 C finely chopped celery
- 1/2 C finely chopped green pepper
- 1 egg
- 3 Ts butter, melted
- 1/2 C Keto Crumbs
- Salt and pepper
- 1 C grated cheese
Cook Zucchini in 1 inch of boiling water for about 15 minutes or until tender, drain and mash. Add remaining ingredients except cheese. Pour into slightly greased Crock-Pot. Cover and cook on High setting for 2 to 4 hours (on low setting for 4 to 8 hours). Before serving, sprinkle with grated cheese.
27. Ham in Low Carb Apple Sauce
- 4 Onions, sliced
- 2 Celery stalks, diced
- 5 lb Ham, boned, cooked
- 1 C Dry white wine
- 10 oz Low Carb Apple Sauce
- 2 Ts low carb thickener
- 3 T Lemon juice
- 1 T Butter
Place onions and celery in removable liner. Place ham on top of vegetables, pour wine over ham. Place liner in base. Cover and cook on low 6-7 hours. Add low carb thickener, lemon juice and butter. Cook until thoroughly heated. Remove ham, place on platter. Do not carve until ham is cool. Pour sauce into liner and mix with vegetables.
28. Ham Tetrazzini
- 2 Cs mushrooms, sliced
- 1 C mushroom broth
- 2 Ts low carb thickener
- 1/2 C heavy creams
- 1 1/2 ts s prepared horseradish
- 1/2 C grated Parmesan
- 1 1/2 Cs cubed cooked ham
- 1/4 C dry sherry or white wine
- 1 package Low Carb Spaghetti
- 2 Ts melted butter
Combine all ingredients except spaghetti and butter in crock pot, stir well. Cover and cook on Low for 6 to 8 hours.
Cook spaghetti according to package directions, drain, add butter, and stir into crock pot. Sprinkle additional grated cheese over the top.
29. Ham Low Carb Tortilla Rolls
- 4 1/4oz. Low Carb Ham Spread
- 1-3oz. pkg cream cheese, softened
- 1 Tbs. chopped green onion
- 1/4 C Low Carb Apple Sauce
- 4 Low Carb Tortillas
In a mixer, beat ham and cream cheese. Stir in Low Carb Apple Sauce and green onion. Spread ham mix on each tortilla and roll tortillas up. Wrap in plastic wrap and refrigerate 2-8 hours.
30. Ham "Meatloaf"
- 1 pound ground cooked ham
- 1/2 pound lean bulk sausage
- 1 C dry Keto Crumbs
- 1 T mustard
- 1 egg, beaten
- 1 ts onion, grated
- 1/2 C heavy creams
In mixing bowl, combine ham, sausage, Keto Crumbs, mustard, egg, onion, and milk. Kneed and form a loaf. Cook in a crock pot on low for 7 hours.
31. Soy Beans With Garlic And Rosemary
- 5 C Water
- 3 C Chopped onion
- 2 C Diced cooked ham
- 1 C Diced onion 1 ts Dried rosemary, crushed
- 3/4 ts Rubbed sage
- 1/4 ts Pepper
- 1 lb Dried Soy Beans
- 14.5-oz. beef broth
- 2 Garlic cloves, chopped
- 1 Bay leaf
Combine the ingredients in an electric crock pot, cook on high for 3 to 4 hours.
32. Quick "Baked" Eggs and Cheese
- 2 Cs Bake Mix, Low Carb
- 3/4 C of Ham
- 1 C of Cheddar Cheese - Shredded
- 1/2 C chopped Onion
- 1/3 C of Parmesan Cheese
- 1/3 C of Sour Cream
- 2 Ts Parsley
- 1/2 ts salt
- 2 garlic cloves
- 2/3 C Milk
- 6 eggs
In a large mixing bowl, stir together ingredients. Pour into a greased 6 quart crock pot and cook on High for 6 to 8 hours.
33. Jambalaya
- 2 C Smoked Ham, chopped
- 1 lb shelled and deveined shrimp
- 2 Onions, sliced
- 2 stalks Celery, sliced
- 1/2 Green Bell pepper, chopped
- 28-oz can Whole Tomatoes
- 1/4 C Tomato paste
- 3 cloves Garlic, minced
- 1 T minced Parsley
- 1 T Fresh Thyme leaves
- 2 T Olive Oil few dashes Hot Pepper Sauce
- few dashes Worcestershire Sauce
- 1 C Uncooked wild rice
In a crockpot, combine all ingredients, mix well, cover and cook on low for 8 to 10 hours.
34. Smoked Ham With Lemons
- 2 zucchinis peeled and thinly sliced
- 1 1-inch thick smoked ham slice
- 1 lemons, peeled, seeded, and sliced
- 3 Ts lemon juice
- 1/3 C Spoonable Brown Sugar Replacement
Place sweet potatoes in crock pot. Arrange ham and orange slices on sweet potatoes. Combine remaining ingredients, stir until consistency of a thin paste. Lightly spread over ham and oranges. Cover and cook on low setting for 7 to 10 hours. 4 servings (about 2-1/2 quarts).
